Recipe Suggestions for Superbowl Party - Mexican/Southwest Theme? by answers Q: We're having a superbowl party this weekend and expect about 15 people coming and going. So far I have planned a large crock pot of pork carnitas w/ tortillas, homemade salsa and guac, homemade baked corn chips. I'm looking for other suggestions, they don't have to be the same theme but that would be great. We're definately going to order a large tray of wings - because you just have to have them!

A: Black bean dip Ingredients 2 14 oz. cans refried black beans juice of one lime zest of one lime, optional 1 cup sour cream 1 cup grated cheese [Monterey Jack, Sharp Cheddar, Chihuahua] 2 cloves garlic, thinly sliced 1 medium summer or plum tomato, seeded and chopped 1/4 cup chopped black olives 1/2 medium white onion, diced 1 chile pepper, diced [seeds and veins removed as desired (see Note)] 1 teaspoon cumin 1 teaspoon coarse salt Method Heat oven to 350° In a baking dish, combine the refried black beans, lime juice, lime zest and sour cream and cheese. Mix well. Stir in the garlic, tomato, onion and chile. Add cumin and coarse salt to taste and mix again. Bake 25 – 30 minutes until hot and bubbly and the edges develop a nice crust. Remove from oven and set aside 10 minutes before serving. Serve with your favorite tortilla chip. Note: The heat in chiles is contained in the seeds and veins. You could also substitute your favorite hot sauce to taste.

Gently stir in artichoke hearts and spinach. 3.Transfer the mixture to the prepared baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned. Stuffed Mushrooms 1 can crab meat 1 roll ritz crackers, crushed 2-3 packages medium mushrooms, stems removed and put aside 1 tsp garlic powder 2 tbsps melted butter 2 tbsp mayo Preheat the oven to 350 degrees. Finely chop half of the saved mushroom stems. You can throw the rest. Add all ingredients to the chopped stems and mix well. If the mixture is dry, add a little water. Stuff the mushroom caps and place on a cookie-sheet. Bake for 45 minutes. Some yummy things I didn't make today.... Sweet and Nutty Brie (My aunt's favorite thing in the world. It's addictive.) 3/4 cup toasted almond, chopped 1/4 cup butter 1/2 cup brown sugar 14 ounces brie round (small wheel) Combine nuts, brown sugar and butter into small saucepan. Heat until sugar and butter are melted. Place the brie on a microwave safe dish. Warm in the microwave for 15-20 seconds, just to soften. Top with sauce. Sausage and Cheese Dip (HUGE crowd pleaser. Everyone I made it for loved it) 1 lb sweet Italian sausage, ground 1 large chopped onion 1 whole chopped red sweet pepper 1 whole chopped green pepper 2 cloves garlic, minced 2 8-ounce packages whipped cream cheese 1-1/2 cups finely shredded Parmesan or Romano cheese 1/4 cup milk 1/4 cup mayonnaise 1/4 cup light dairy sour cream Crostini, bagel chips, blue corn tortilla chips, or sliced baguette-style French bread In a large skillet cook sausage, onion, red and green peppers, and garlic until sausage is brown, stirring often. Drain off fat. Set sausage mixture aside to let cool. In a large bowl stir together cream cheese, Parmesan cheese, milk, mayonnaise, and sour cream. Add sausage mixture and banana peppers; gently stir to combine. Spread mixture into a 9-inch fluted quiche dish or deep-dish pie plate. Bake in a 350 degree F oven about 30 minutes or until bubbly. Serve with crostini, bagel chips, blue corn tortilla chips, or French bread. Crabbies (awesome. My daughter calls them crabbie-patties. Not a fishy taste at all) 1 pkg English muffins 1 small jar Old English (spreadable sharp cheddar cheese) 1 stick butter 1 tsp garlic powder 1 can crab meat 1 tbsp mayo Cream together all ingredients, except the muffins. Spread on the muffins, broil until brown and bubbly.

Ingredients: • 8oz pasta • 1lb ground beef • 6 bacon strips • 1 can tomato soup • 1 cup shredded cheddar cheese Directions: Fry ground beef and bacon, drain grease. Cook pasta as directed on package and drain. Pour pasta in skillet with beef and bacon. Add soup to skillet and cook until soup is hot. Sprinkle with cheese and cover until cheese is melted. GERMAN POTATO SALAD (Served warm is best in winter!) This recipe is good if you are serving Brats or BBQ Sandwiches, etc. Probably not good with chili. Lots of ingredients, but REALLY easy to make. 1/2 lb bacon 2 tsp. celery seed 1/2 cup chopped celery 1 cup chopped onion 1 cup vinegar 1 cup water 4 tbsp. flour 4 tbsp. sugar 3 tsp. salt 12 cups cooked potatoes, chopped pepper parsley Cook bacon till crisp; drain (reserving 1/2 cup fat), and crumble. Cook onion and celery in fat till just tender. Blend in flour, sugar, salt, celery seed, and pepper to taste. Add vinegar and water. Cook and stir till thickened and bubbly. Add bacon and potatoes; heat thoroughly, tossing lightly so as not to break up the potato slices. Garnish with parsley. SOUR CREAM SALSA 1 LARGE tub of Sour Cream 1 LARGE jar of your favorite chunky salsa Mix together thoroughly and serve with Tortilla chips. Really good, fast, and serves a lot of people for a little $$. EASY 7 LAYER SALAD Ingredients: Bean Dip Guacamole Sour cream Chopped tomatoes Chopped black olives Shredded cheddar cheese Chopped green onions Corn Chips Directions: Add In serving dish layer in order given, except corn chips. I need a GREAT SuperBowl Chili recipe!!? by ImperialCountyQueen Q: Hey everyone I need a great non-spicy superbowl chili. I had one once at a superbowl party that was to die for with alot of cheese, frito lays and sour cream. It didnt have very much onion in it either. I would appreciate everyones help!

A: INGREDIENTS: 1lb of beef (ground meat) 1 medium choped onion 1 green pepper (optional, might be spicy) 2 cloves garlic in minced 1 to 2 tblspns mild chili powder 1 bay leaf 1 tsp oregano 1 tsp ground cumin salt & black pepper taste 28 oz crushed tomato product or diced tomatoes 2 15 oz cans of beans of your choice... kidney, black, rosales, or pinto, or black eyed peas if you like (you can eliminate some ingredients if you think they are to spicy) METHOD: saute onion and garlic (and green pepper) until softened, add meat in small bits and brown, add spices, herbs, and tomato products and beans (drained), stir to incorperate. cover and siver 1 1/2 hrs to meld flavors. stir every 20 mins or so, or use the oven at 350*F serve over rice or cornbread or cincinatti style over spaghetti (might be nasty to you) you can make it jucier by adding more tomato the less chili powder, the less spicier. this is a very mild reguler recipe. enjoy! PS. my secret ingredient is a can of tomato soup, its my great grandmothers secret.

Does Anyone Have a Good Hot Wing Recipe for the SuperBowl? by Dchapl78 Q: I'm supposed to bring 100 mild, medium, and hot wings to asuperbowl party. I want them to taste like the ones at the restaurant!! Does anybody have a good sauce recipe they don't mind sharing? And also, how do I make them different sauce temperatures(mild, meduim, hot)?

A: Fry the wings in oil and when they are nice and crispy, drain, and toss in the sauce. For varying degrees of temperature, get sauce that is hot, medium and mild. Heat up the sauce and add a little butter (regardless of what type of buy). Then toss the fried wings in the sauce. If you cannot find different temperatures of sauce, you can use Frank's Red Hot and add some Tabasco (and a little butter) for the "hot" wings, use Frank's Red Hot by itself (with a little butter) for the medium, and find a wing sauce or marinade at the store for the mild. You can also tame the Frank's Red Hot (and a little butter) with a little tomato sauce to make it mild (if you cannot find the wing sauce), but please make sure to start with just a little, like a teaspoon at a time, tasting as you add, so it doesn't end up tasting like tomato sauce. Good luck! P.S. For future wing adventures - you can order sauce from the Anchor Bar in Buffalo, NY https://secure.vonostingroup.com/Merchant2/merchant.mvc?Screen=CTGY&Store_Code=ABNY&Category_Code=AB-SAU it comes in different temperatures and is the best, in my opinion. That's what I do!

Do you know of any good bundt cake recipes ? by kimberlyann_4748 Q: Hey, I have this stadium bundt cake pan and I've never used it because I can never find a good enough recipe. I've been looking online for bundt cake recipes but nothing really tickles my fancy. I'd like to make it for the superbowl. So I'm looking for a recipe that everyone is going to love, personal experiences are surely welcomed. I've never made a bundt cake before. I'll take anything! okay thank you. i have the pan, so i guess i can use any recipe :) thanks!

A: It's not really a cake, but it's typically made in a bundt cake pan and would be a perfect snack for the superbowl, since you just kind of pull it apart...monkey bread! Yum! :) Or, you could go with a classic rum cake or gingerbread cake, or some kind of lemon cake with a lemon or cream cheese-like glaze/icing. Yummo. :)

What's a quick and easy Superbowl recipe? ? by Beanstalk92656 Q: Help! I'm visiting a friend's house for the Superbowl today and I need a quick recipe that I can make in about 1 hour this afternoon. It must be easy to transport! Thanks! Finger foods, dips, desserts, anything would be good. The host is serving pizza and chips, so I'm open to almost anything.

A: I have a sweet and sour meatballs dish that EVERYONE always asks me to make. So simple, cheap, tasty, and perfect! You get a big bag of Armour meatballs (the big one, I think it's like 36 oz.) A big jar of jelly. Not the regular size one, the next size up. And a jar or chili sauce. It's near the ketchup... I like Heinz but any brand will do. Put the bag of meatballs, the jar of chili sauce, and about half the jar of jelly into a crockpot on medium or high setting, you want to heat up the meatballs and melt the jelly and chili sauce. Keep an eye on it and stir occasionally. After a few minutes, if the sauce has liquified, taste it, if it is to your liking, all that is next is just to simmer until it is done. If not, add jelly a tablespoon at a time... By the time the meatballs are done, it will take more than an hour but after you put everything in the crockpot, you are not really doing much more than keeping an eye on it... You can eat it plain just with toothpicks, or serve cheese cubes with it, but I guarantee everyone will love it!!! If you want spinach dip, you get a packet of vegetable soup seasoning or ranch dressing seasoning, whichever, 1 package of frozen spinach, and mayo. I don't know the recipe off hand, but look on the back of the soup mix and ranch mix and it should tell you... You can serve that with bread chunks... That's always a hit at parties too... Last but not least, there is a 5 layer dip that is to die for... Layer a large glass bowl (you want to be able to see through the sides) with a can of refried beans. Next layer is a container of guacomole dip. Next layer is a container of sour cream. Next layer is a jar of mild salsa. And last layer is a bag of mild or medium cheddar shredded cheese. Serve with Tostitos. Good luck!! I am sure whatever you make will be a success!

Superbowl Appetizer Recipes? by jacey10 Q: Any great tried and tested recipes out there? I'm always looking for a new favorite! Here's one I am going to try: Buffalo Chicken Dip 2 cans shredded chicken 2 8-oz packages cream cheese 1/4 - 1/3 cup hot sauce (Franks, Buffalo sauce, etc.) 1 cup ranch dressing 1 1/2 cup shredded cheese (I'm going to try mexican) Layer cream cheese at bottom of casserole dish, mix other ingredients separately (except cheese) and spread over cream cheese. Cover top with cheese, heat in oven at 350 until cheese is bubbly. Let me know your suggestions for other recipes!

A: Here are some of my favorites: Cream Cheese Cracker Spread: Scallions, chopped black olives, cream cheese, cup grated cheese, dash garlic powder, dash onion powder, dash white pepper, dash salt. Blend together. shape into ball. serve with crackers. Optional: roll in chopped nuts. Chicken Wings We're all about easy! I buy the best sauce I can find for the flavor I want (terriaki, BBQ, etc.), then put the wings and the sauce in the crock pot until done (about 4-6 hours). If they're done sooner, I turn the crockpot to 'warm' and let them simmer. Yum! This is the best and easiest dip recipe, and people always rave! I tell them it’s really hard to make (lol): Cream Cheese Dip 2 large blocks of cream cheese 1 large jar Pace picante (medium)-use most of the jar Soften cream cheese and mix with hand mixer until smooth. Add picante and mix with hand mixer. Leave in frig for a few hours to blend flavors. Serve with tortilla chips. I know it seems too simple to be great, but it is! Crab Dip is easy and very good. 1pkg Softened Cream Cheese 2 Tbsp Minced Onions 1/3 C. Bottled Chili Sauce 1 Can of Crab meat Parsley Flakes to Garnish Mix onion with cream cheese and spread on serving plate. Top with chili sauce. Sprinkle rinsed drained crabmeat on sauce & garnish with parsley flakes. Serve with Ritz crackers. Takes about 5 minutes to put together .. and is always a hit! SPINACH DIP 1 (10 oz.) pkg. frozen chopped spinach, cooked & drained 2 sm. thin scallions, chopped fine 2 lg. eggs, hard cooked & chopped fine 1/3 c. mayonnaise 1/3 c. sour cream 2 scant tbsp. fresh lemon juice 1 tbsp. Dijon mustard 1/2 tsp. Tabasco sauce Dip size Fritos or tortilla chips Mix mayonnaise, sour cream, lemon juice, mustard and Tabasco in medium bowl until smooth. Stir in spinach, scallions and eggs. Cover tightly and chill several hours. Serve with dip-size Fritos or tortilla chips. Yield: 2 cups. This is fun! Beer Boil 2 pounds of large shrimp (don't shell them) 2-3 cans beer (any kind) water 1 pound kielbasa sausage crab (king crab is best) shrimp and crab boil (in any supermarket) Slice the kielbasa into serving pieces. Wash the shrimp in cold water. In a large pot, bring to a boil the beer, shrimp boil, and enough water to cover shrimp, etc. Add crab and sausage. Cook 5 minutes. Add shrimp and cook until shrimp turns pink. Dump into a big pot. Use your fingers!!! Serve with melted butter, Gold Dipt cocktail sauce, and spicy mustard. Add frozen corn with the shrimp, if you like corn. Here's my no fail, always asked-for nacho dip. When it's heated through, put it on warm or low, or unplug for a short time if it's too hot. Everyone raves about this: 1 1/2 pounds ground beef, browned 1 can cream mushroom soup 1/4 cup butter 2 lb Velveeta, cubed 2 cups Pace Chunky Salsa, (medium is our favorite, mild or hot if you like) 3 Tbsp Chili Powder Put all into crock pot. Cook on low 1-1 1/2 hours, stirring occasionally. Serve with tortilla chips. Yummy! This is the newest addition. The author says your guests will lick the bowl. With an endorsement like that, how can I pass up trying this one? http://allrecipes.com/Recipe/Addicting-Chip-Dip/Detail.aspx

Forget the Superbowl.. What are some good recipes for the big showdown on Thursday? by carolina_girl_sunshine28 Q:

A: Brownies

Does anyone have any good appetizer recipes for a Superbowl party? GO COLTS!!!? by cutiepatootie Q:

A: All of these take 30 minutes or less to make Spicy Walnuts MAKES 2 CUPS Okay, the sugar takes this out of the "health food" category but if it really bothers you eliminate it - they'll still be a sensational easy appetizer. 1 Tbsp honey 2 tsp olive oil 2 cups walnut halves 2 Tbsp sugar 1 tsp coarse salt 1 tsp ground cumin 1/2 tsp ground coriander 1/4 tsp cayenne pepper In a large nonstick skillet, heat honey, oil, and 1 Tbsp water over medium heat - not too hot or that honey will become a real mess. Add walnuts & toss to coat. Sprinkle the sugar, salt, cumin, coriander, and cayenne over the nuts, then toss and stir until the nuts are well coated and lightly browned, 2 to 3 minutes. Spread them out on a baking sheet or platter to cool completely. -------------------------------------------------------------------------------- Zucchini-Lemon Chips Serves 4 to 6 You’ll find this easiest if you have a deep-fryer but a deep sauce pan will work, too. And your oil should be fresh since the zukes have such a mild flavor-you don't want them to taste like last week's fried oysters. 4 cups canola or olive oil 1 cup flour Kosher salt and freshly ground pepper 1 lb firm large zucchini, sliced into paper-thin rounds 1 lemon, sliced into paper-thin rounds 2 Tbsp finely chopped flat-leaf parsley 1 garlic clove, minced 15 large basil leaves In a deep-fryer or a large, heavy saucepan, heat the pure olive oil to 350F. Set a wire rack over a large baking sheet and cover it with paper towels. Put the flour in a large resealable plastic bag , add salt and pepper and shake it up. Now add about a third of the zucchini and lemon slices to the bag and shake to coat them with flour; shake off any excess and pop them into the floured to the oil. Cook until deep golden on both sides, about 2 minutes. Transfer to the paper towels to drain. Fry the remaining zucchini and lemon slices in 2 more batches, adjusting the heat as necessary to keep the oil temperature constant. Sprinkle the zucchini and lemon slices with the parsley and garlic. Fry the basil in the hot oil until crisp, 10 to 15 seconds. Transfer to paper towels to drain. Gently toss the fried basil with the zucchini and lemon slices Serve to your guests knowing they’ve never had this one before and that they will want your recipe. With a pastry brush, lightly brush both sides of bread with olive oil. Place on a baking sheet. Bake 5 minutes per side until lightly toasted. While it's toasting combine mayo, cheese, and Worcestershire sauce in a small bowl. Slather each toast withabout 3 tablespoons and spread evenly. 3. Now back into the oven for 5 to 8 minutes until lightly puffed and golden. Serve 'em hot. -------------------------------------------------------------------------------- Little Chicken Burgers Serves 8 No, not "Chicken Little" burgers – how could we eat Chicken Little? And, no, I don’t mean just a little chicken. These easy appetizers are small patties made with ground chicken, get it? And apparently mini burgers are a big thing at the coolest parties these days, so serve these and be cool. 1/2 cup bread crumbs 2 lb ground chicken 3 garlic cloves, minced 1/2 cup minced Italian parsley 1/2 tsp dried oregano 1/2 tsp dried basil 2 Tbsp lemon juice Salt & freshly ground black pepper 1 to 2 Tbsp extra-virgin olive oil Place the bread crumbs in a small shallow dish. Set aside. In a large bowl, combine the chicken, garlic, parsley, oregano, basil and lemon juice. Add salt and pepper to taste. Form the mixture into 16 patties, each flattened and about 2 inches in diameter. Press the patties into the bread crumbs to coat each side. In a large nonstick skillet, heat the oil over medium heat and cook, turning once, until each side is browned and the patties have firmed up, about 10 minutes total. Serve hot. -------------------------------------------------------------------------------- Chicken Almond Puffs Serves a bunch (depending on size of spoonfulls) For your chicken use either a) leftovers, b) precooked packaged chicken or c) a purchased rotisserie chicken. This recipe will push our 30 to 35 minute limit but if you chop quick (but carefully) you should make it. 1 cup finely chopped, cooked chicken meat 3 Tbsp + 2 tsp toasted and chopped almonds 2/3 cup chicken broth 1/3 cup canola oil 1/4 tsp Worcestershire sauce 3/4 tsp seasoning salt 3/4 tsp celery seed 1/8 tsp cayenne pepper 2/3 cup all-purpose flour 2 tsp dried parsley 3 eggs Preheat oven to 450F. Combine chicken and almonds and set aside. In a large saucepan, combine the chicken broth, oil, Worcestershire sauce, parsley, seasoned salt, celery seed and cayenne pepper. Bring to a boil. Add flour and stir mixture for a few minutes, remove from heat and let stand for 5 minutes. Add eggs, one at a time, beating well after each. Beat until smooth. Stir in chicken and almond mixture. Drop by heaping teaspoonfuls onto greased baking sheets. Bake in preheated oven for 12 to 14 minutes or until golden brown. Serve warm. Onion-Dip-Not-From-Soup-Mix Serves 4 Yes, you can make onion dip that doesn't utilize Lipton Onion Soup Mix. Here's the real thing, and just as easy. 1 cup low fat sour cream 1/4 cup finely chopped scallions/green onions 2 tsp lemon juice Blend sour cream and lemon juice and add scallions and stir. Just rovide each person with 1/2 cup of blanched vegetables for dipping and smile proudly. -------------------------------------------------------------------------------- Mozzarella in Carrozza Makes 8 Carroza is Italian meaning “in a carriage”. I suppose the coating is the “carriage” but it seems to me there must be a better phrase. Anyway it’s an easy appetizer that’s not really like any other and that’s good, isn’t it? 1 8 oz package part-skim mozzarella cheese slices 8 slices thin, firm white bread, crusts removed 2 large eggs, well beaten ¼ cup milk ¼ cup all-purpose flour ½ tsp salt ¼ tsp ground black pepper ½ cup plain dried bread crumbs 3 Tbsp vegetable oil 4 Tbsp butter or margarine 8 anchovy fillets, drained 1 Tbsp chopped fresh parsley 1 tsp capers, drained 1 tsp fresh lemon juice Preheat oven to 200F. Place 2 slices cheese between 2 slices bread to form sandwich. Repeat with remaining cheese and bread. Using low, wide bowls, in one, beat eggs and milk with wire whisk. In another, combine flour, salt, and pepper. Put bread crumbs in the third. Dip sandwiches, one at a time, in flour mixture, shaking off excess, then in egg mixture, and finally in bread crumbs, shaking off excess. In nonstick 12-inch skillet heat oil over medium heat until hot. Add sandwiches & cook until golden brown, about 1½ minutes per side. Cut each sandwich on diagonal in half diagonally (corner to corner; but you knew that). Arrange on platter in single layer. Keep them warm in oven until all are cooked and the sauce is ready. In same skillet, melt butter, add anchovies and cook, stirring constantly, 1 minute. Add parsley, capers, and lemon juice; cook 30 seconds longer. Transfer sauce to small bowl and serve sauce with sandwiches. I think they’re gonna love these. Crab Dip with a Kick Serves 4-6 There's crab dip and then there's CRAB DIP, and that's what we have here. A little horseradish, a little Old Bay helps turn it into one very special dip. But even if you paid a lot for the crab be sure to pick through for bits of shell before adding. 8 oz whipped cream cheese with chives 2 Tbsp whipping cream 3 Tbsp minced Bermuda or sweet onion (optional) 2 tsp bottled horseradish 1/2 to 1 tsp Old Bay Seasoning 3 Tbsp shredded sharp Cheddar cheese 1 lb fresh lump crabmeat, undrained Preheat the oven to 400°F. In a large mixing bowl, blend the cream cheese and cream until smooth. Mix in the onion, horseradish, Old Bay, and Cheddar cheese. Stir in the crabmeat and its juices. Place in a medium ovenproof dish, such as a 9-inch pie plate, and bake about 10 minutes until bubbly. Serve it hot. -------------------------------------------------------------------------------- Nachos with Chorizo & Black Beans Makes 36 Not your basic Cineplex nachos, uh, uh. If they made them like this no one would buy their popcorn 36 unbroken large tortilla chips 3 large ripe plum tomatoes, cut into 1/4-inch pieces 1/3 cup chopped fresh cilantro 1/4 tsp salt 1 Tbsp vegetable oil 1 fully cooked chorizo sausage (3 oz), finely chopped 1 medium onion, finely chopped 1 garlic clove, finely chopped 1/2 tsp ground cumin 1 can (15 to 19 ounces) black beans, rinsed and drained 1 cup (4 oz) Monterey Jack cheese, shredded 2 pickled jalapeno chiles, very thinly sliced Preheat oven to 400¡F. Arrange as many tortilla chips as will fit in single layer on two ungreased large jelly-roll pans. Combine tomatoes, cilantro, and salt In a small bowl, set aside. Heat oil In 10-inch skillet over medium heat. Add chorizo, onion, garlic, and cumin; cook, stirring, until onion is tender, about 5 minutes. Stir in beans and heat through. Place 1 Tbsp bean mixture on each tortilla chip then sprinkle cheese over beans and top each nacho with 1 skinny little slice of jalapeno. Bake until cheese begins to melt, about 5 minutes. Remove from oven & spoon about 1 tsp of the tomato/cilantro mix on each nacho. Transfer nachos to platter. Repeat with any remaining chips, bean mixture, cheese, and tomato mixture. Serve warm. . -------------------------------------------------------------------------------- -------------------------------------------------------------------------------- Crab Toast with a Kick Makes 40 Small Toasts For the toast here I suggest that sort of solid, sort of square loaf of Pepperidge Farms or Brownberry Oven white bread. 10 slices white bread 1 8 oz can crabmeat 2/3 cup mayonnaise 1 tsp lemon juice 1 tsp sherry or white wine Salt and pepper to taste Cayenne pepper(Oh, so little) Preheat oven to 450 degrees. Mix crabmeat, mayo, lemon juice, wine, salt and pepper and spread this tasty mixture on bread slices. Add a tiny sprinkle of cayenne. Cut slices into quarters, place them on cookie sheets and bake for about 10 minutes, or until toast is just browned. Serve ‘em hot. -------------------------------------------------------------------------------- Cheddar Straws Makes too many to count Please try not to eat all of these treasures before your guests or family arrive. 2 cups all-purpose flour 2 cups shredded sharp Cheddar cheese 3/4 cup butter ( or “other”, if you must) 1 teaspoon baking powder 1/4 teaspoon cayenne pepper 1/2 teaspoon salt 1/2 cup water Preheat oven to 400 degrees F. Grease or line a baking sheet with parchment paper. Combine the flour, baking powder, cayenne pepper, salt, grated cheese and butter (or "other") in a bowl and mix until well combined. Add just enough water to make a very stiff dough. Roll pieces of the dough into pencil-width sticks on a lightly floured surface & cut them into 4 to 5 inch lengths. Arrange the pieces on the baking sheet and bake at 400 degrees F for 5 minutes or until browned. Avacodo Salsa Makes About 1 cup Break out of that red salsa habit. Here’s a green one one with a hint of guacamole and a real kick! 2 ripe avocado 4 tomatillos, husks removed 1/4 cup cilantro leaves 1/2 cup green onion 1 tablespoon lemon juice 1/2 jalapeno, fresh, seeded 1 teaspoon salt 1 large garlic cloves 1/2 of a small onion Scoop seeds from the avocado.. Remove tomatillos from husk and cut into quarters.. Chop green onions coarsely. Process the avocados, green onions and tomatillos with the rest of the ingredients for 2 second pulses until you reach your preferred consistency. Serve with tortilla chips. Crabby Stuffed Mushrooms Serves 6 When people get stuffed they're kinda mellow, but apparently mushrooms get "crabby". 1 lb fresh mushrooms - big ones 7 oz crabmeat(fresh, canned or faux-ney) 5 green onions, thinly sliced 1/4 tsp dried thyme 1/4 tsp dried oregano 1/4 tsp ground savory ground black pepper to taste 1/4 cup grated Parmesan cheese 1/3 cup mayonnaise 3 Tbsp grated Parmesan cheese 1/4 tsp paprika Preheat the oven to 350 degrees In a medium bowl, combine crabmeat, green onions, herbs, and pepper. Mix in mayonnaise and 1/4 cup Parmesan cheese until well combined. Wipe the mushrooms clean with a damp towel (Unless you're making 'shroom soup DO NOT clean them under water.) Remove stems and fill the caps with rounded teaspoonfuls of the yummy filling. Place them in an ungreased shallow baking dish and sprinkle with Parmesan and paprika. Bake for 15 minutes and serve 'em hot. -------------------------------------------------------------------------------- Prosciutto Roulades Makes 12 These rolled-up easy appetizers are just that - easy. Won't take but a few minutes to make and they'll be gone in seconds when served. 2 oz. ricotta cheese (J/4 cup) 2 oz. Stilton cheese, crumbled 1 tablespoon dairy sour cream 12 very thin slices prosciutto (at a double-digit price-per-pound they better be thin) 1 pear Lemon juice Garnish with lime slices and dill sprigs, if desired In a small bowl, thoroughly blend ricotta cheese, Stilton cheese and sour cream. Spread evenly on prosciutto spreading almost to the edges. Peel, quarter and core pear, then cut each quarter lengthwise in 3 thin slices. Brush slices lightly with lemon juice to prevent darkening. Place a pear slice on each cheese-topped prosciutto slice and roll'em. Keep them cool in the fridge until ready to serve. Garnish with lime slice and dill sprig, if you want to add eye-appeal to taste-appeal. -------------------------------------------------------------------------------- Salami Crescents Makes 32(Reduce everything by half for a smaller party) Try not to eat them all yourself while waiting for the guests or family to arrive. 1 17 oz pkg. (2 sheets) frozen puff pastry, thawed 2 Tbsp dairy sour cream 1 tsp prepared hot mustard 16 slices Italian salami 8 slices Swiss cheese, room temperature 1 egg, beaten Unfold pastry sheets. On a lightly floured board, roll out each sheet of pastry to a 14-inch square. Cut each square in quarters, making a total of eight 7-inch squares. Preheat oven to 400F. In a small bowl, mix sour cream and mustard. Spread evenly over pastry squares, spreading almost to edges of pastry. Cut salami and cheese slices to roughly fit the squares. Arrange salami and cheese on the pastry. NOTE: When you follow the instructions below don't pull the knife across; rather use a chef's knife or cleaver to cut straight down. This way you won't find yourself picking up little pieces of salami & cheese and trying to replace them on the pastry. Cut each pastry square in half (corner-to-corner) to make 2 triangles, then cut into quarters. Starting from wide side of the triangle, roll 'em up and arrange on baking sheets, points underneath; bend pastries gently into crescent shapes. Brush with egg. Bake 10 to 12 minutes until golden. Hummus Just Like Grandma's (If you're Middle Eastern) Makes 2 Cups Compare the cost of 2 cups of store-bought hummus (not humus-that's garden stuff-decayed leaves and vegetable matter) with the cost of the beans, tahini, et al and you'll feel even better about this easy appetizer recipe for a delicious dip. 15 oz. can garbanzo beans, drained 1/4 cup fresh or frozen lemon juice 1/4 Cup sesame or tahini paste 4 cloves garlic, minced (optional) 1 tsp. salt 1/4 tsp.pepper 2 Tbaps. olive oil 2 Tbsp fresh parsley, finely chopped 1 tsp paprika Pita bread, sliced pie-style into 8 triangles per pita In food processor or blender combine beans, lemon juice, sesame or tahini paste, garlic (if used), olive oil, salt, and pepper. Process until smooth. Transfer to serving bowl. Sprinkle loosely with parsley and paprika. After that five minutes of labor just serve it with little triangles of pita bread and veggies, if you like. Toasting the pita pieces makses them extra good. -------------------------------------------------------------------------------- Crostini - Easy Appetizer Style Makes 12 These "little toasts" can be topped with many more combinations than this one. So, when the people you last served them to return, they won't think you only know how to make one easy appetizer. 12 slices Italian bread (the long skinny kind), 1/2 inch thick 1/4 cup olive or vegetable oil 1 Cup chopped tomato 3 Tbsps. chopped fresh basil leaves 1 Tbsp. capers or chopped ripe olives 1/2 tsp. each salt & pepper 12 slices mozzarella cheese Heat oven to 375 degrees Place bread slices on ungreased cookie sheets and drizzle 1 tsp. oil over each slice. Mix tomato, basil, capers, salt and pepper and spread half of the tomato mixture over bread slices; top each with a cheese slice and spread remaining tomato mixture over cheese. Bake about 8 minutes or until cheese is melted. Serve hot. -------------------------------------------------------------------------------- Cheddar Mini-Quiche Makes 4 to 5 Dozen Sized for a crowd you can freeze some for your next bash. Five minutes to prepare and 25 or 30 to bake. You'll knock their socks off with this easy appetizer. 3 eggs 1 lb. small curd cottage cheese 3 Tbsp. sour cream or sour 1/2 and 1/2 4 oz.sharp Cheddar, (pre-shredded in a bag) 1/2 Cup Bisquick 1/4 tsp. salt Black pepper to taste 4 Tbsps. melted butter In large bowl combine all ingredients and blend just until mixed. Spray miniature muffin tins liberally with vegetable spray or use non-stick tins. Fill each cup almost full. Bake in preheated 375° oven 25 to 30 minutes. OK, it's not the easiest easy appetizer but the result is worth the little extra effort. -------------------------------------------------------------------------------- Mushrooms Marsala Serves 4 Quick! The guests are due in ten minutes! You really want to present an appetizer-you can do it!. 1 lb. mushrooms (buy clean ones to save time) 2 Tbsps. butter Juice of 1/2 lemon 1/4 cup dry Marsala wine Salt and freshly ground pepper 1 Tbsp. minced fresh parsley Break off the stems (save them for soup) and leave the mushroom caps whole. Heat butter in a skillet (call it a "saute pan" this becomes "gourmet") and sauté the mushrooms, gently stirring until lightly browned but still firm. Add lemon juice, Marsala, salt and pepper to taste, and minced parsley. Cook and stir 2 minutes longer and serve hot. Now that's an easy appetizer. See, I said you'd be ready in 10 minutes. -------------------------------------------------------------------------------- Gourmet Fried Cheese Makes approx. 30 pieces Why "gourmet"? Expensive cheese, not mozzarella. Be sure the cheese is cold when you make these so it will cut easily. 8 oz. Brie or Camembert cheese 1/2 cup all-purpose flour 1 egg 1/2 cup milk 1 cup fine breadcrumbs Oil for deep frying Cut the cheese into bite-sized pieces. Spread the flour on a square of waxed paper. Beat the egg with a fork and mix well with the milk in a shallow bowl. Spread the breadcrumbs on another square of waxed paper. Heat oil in a deep-fat fryer or wok to 325 degrees and dip the pieces of cheese in flour, shaking off excess. Dip in the egg-and-milk mixture and roll in breadcrumbs. Deep fry for 10 to 15 seconds, or until golden brown. Serve immediately - but be careful, the cheese is hot.

What food to get for the Superbowl? by Q: I already got chip n dip and some hot wings. Was just wondering if any of you guys have any special Superbowl night recipes that would be good for a few men hangin out.

A: you should make chilly. and make a nacho dip by layering with refried beans on the bottom, then cheese, then sour cream. or you can buy frozen some different appetizers like jalapeno poppers etc... all you'd have to do is pop them in the oven.

superbowl chicken wing recipes? by Q: what are some good chicken wing recipes?

A: Create a flour based batter. For traditional hot wings, use salt, pepper, garlic powder, and cayenne pepper for seasonings. Dredge wings in flour mixture and deep fry in preheated 375 degree oil for 10 - 15 minutes...until golden brown. Ten minutes is usually enough in my fryer. Also remember not to overcrowd wings. While these are frying, melt one part butter in sauce pan and add another part franks red hot sauce (or whatever hot sauce you like). For extra spicy, add crushed red pepper flakes to this mixture as well as batter. Once browned, transfer to paper towel. Then toss in sauce mixture. Voila! Restaurant style wings! Suggested variations.... Add cajun seasoning to batter and sauce mixture for cajun flavor. Omit cayenne from batter and add extra garlic powder, infuse butter with garlic and add no other sauce. Sprinkle wings with parmesan after tossing in garlic butter. Omit cayenne and add lemon pepper to batter. Add lemon zest and lemon pepper to butter. After tossing wings in lemon pepper butter, squeeze a little fresh lemon juice on them. Omit cayenne from batter. Add one part honey mustard to one part melted butter. Omit cayenne from batter. Add one part teriyaki or any kind of hawaiin sauce to butter.

TV Guide Superbowl recipes? by Leslie G Q: Does anyone out there have a recipe that came out of the TV guide like back in the early 1980s. It was a Kraft taco salad. It had Catalina dressing, hamburger meat, kidney beans and several other ingredients that I can't remember. I have checked the Kraft website and been unsuccessful in finding it. If you have it I would like to get it. Thank you.

A: Is this it? Catalina Taco Salad 1/2 kg ground beef 1 packet of taco seasoning mix 1 head iceberg lettuce, shredded 2-3 tomatoes, sliced into wedges 2-3 onions, chopped 1 can chilli beans, drained 1/2 cap sliced olives, drained (optional) 1 bag corn chips, I like to use Cool Ranch Doritos shredded cheddar cheese Kraft's Catalina salad dressing fresh chunky salsa hot sauce, if the beans and salsa aren't hot enough Now all you have to do is: Brown beef in a skilet and then drain. Add taco seasoning and prepare according to package directions. Sometimes it will require you to add some water. Make sure to cool the meat before including it with the rest of the ingredients. Put everything in a large bag (some even use those medium sized garbage bags earning it the unappetizing nickname of Trash Bag Taco Salad) or plastic container and shake it like a polaroid picture! Transfer the salad into a big bowl, pile on the salsa, dress with the Catalina and sprinkle generously with shredded cheese and voila! Too easy.

Superbowl Party Recipes? by і ♥ нім Q: What is your favorite SuperBowl party food? Can you post the recipe?

A: stuffed mushroom caps: 1 container herb & garlic cream cheese package of imitation crab or canned crab couple dozen mushroom caps cheese, like cheddar or jalapeno jack mix cream cheese & crab, stuff mushrooms & top with shredded cheese. bake at 425 for 15 minutes, super easy. beer cheese for crackers goes over well too: old cheddar, a couple cloves of garlic in the food processor with enough beer poured in to make a spread. bacon wrapped weinies: cut hot dogs in five pieces, wrap with half a piece of bacon, secure with toothpick, then mix some brown sugar with just enough water to pour it over them all on a cookie sheet then bake at 425 until done, maybe 25 minutes but really watch them so they dont burn. sorry, i never measure anything :)

Add milk and whisk until smooth. Add the broccoli and stir. Simmer until bubbly. This is also even better using a package of mixed broccoli and cauliflower, steamed. You may add two packages of broccoli if you like it really broccoli-y. I just buy the plastic bag of Mann's broccoli, poke a hole in it, and microwave the bag for 6 minutes to steam it perfectly! Gradually stir in chicken stock until well blended. Heat to simmer. Add more roux if thicker consistency is desired. 4. Does anyone have any easy and tasty crockpot recipes for a superbowl party? by NOTHINGNESS Q: Not much time left. I am trying to avoid the usual pizza and wings theme. My friends deserve better than that. Thanks in advance. (n_n) V Thanks for all the responses. My mind is made up.

A: half a crockpot full of your favorite chili, then add at least 1 3 pound chunk of velveeta cheese, more if you like things really cheesy. heat and stir occasionally till cheese is melted. Add chopped jalepeno peppers if you want. Serve over doritos or similar chips=Super Nachos. Lots of fresh veggies too can be dipped in it. Or.....a build your own poorboy set up. lay out platters of assorted coldcuts, cheeses, sliced onions, peppers, lettuces tomatoes pickles, anything that is good in a sandwich. Offer a few different bread spreads, like mayo, mustard, (reg and spicey) chuyneys, Miracle Whip, etc. Get buns or baguettes from favorite bakery and you have a feast. A pot of your fav chili to accompany this tops it off nicely.

I need some different appetizer recipes for a superbowl party? by Cookie Q: I need some different recipes for a superbowl party...other than the typical wings and nachos and stuff....some good finger foods and appetizers. HELP

A: Bacon Wrapped Weiners 2 lbs Little Smokies sausages (we use Hillshire Farm) 1 lb bacon (real bacon, no turkey bacon or maple flavored) 2 cups light brown sugar Line large baking sheet with foil (we don't always do this, but it's easier for cleanup). Cut bacon into thirds, resulting in several 3" strips. Wrap each weiner with bacon, line them loosely in the pan as you go. Cover with brown sugar, it'll seem like a lot of sugar, but it cooks down Bake 375 for 45 minutes. Broil at the end until top is crisped. Sausage Cheese Balls 2 lbs regular ground sausage 1 1/2 cups all purpose baking mix 4 cups shredded sharp cheddar cheese 1/2 cup finely chopped onion 1/2 cup finely chopped celery 1/2 tsp. garlic powder Preheat oven to 375%. Mix all ingredients. Form into 1 inch balls. Bake 15 minutes on ungreased cookie sheet until golden brown. Makes about 6 dozen. Sausage cheese balls can be frozen uncooked.

Add the diced chicken, chopped celery, minced onion, salt, and pepper. Mix well, then set aside Separate each can of the crescent dough into 4 rectangles. (Do not separate it into 8 triangles as you would for dinner rolls. Press the extra perforations together to seal.) Spoon about one half cup of the cream cheese/chicken mixture onto the center of each piece of dough. Fold the dough in half over the chicken. Pinch the edges of the dough together to seal. Place the filled pockets an ungreased cookie sheet. Brush top of the dough with the melted butter. Bake in a preheated oven at 350° for 25 to 30 minutes or until golden brown. Bring to a low boil, reduce heat and simmer for about 45 minutes, stirring occasionally. Stir in the kidney beans and simmer for about 15 more minutes. Optional - Top individual servings with grated cheddar. ----------------------------------------- Hot Ham & Cheese Braid 1 can Pizza Crust 1/2 lb Ham - thin sliced from deli 1/2 onion - chopped 1 1/2 TBLSP prepared mustard 3 or 4 slices of swiss cheese Roll pizza crust out on a cookie sheet. Slice in a fringelike pattern on both long sides of the dough, making slices every inch or so. Leave about 3 inches uncut in the middle of the dough. (Sorry - don't know how to explain this better!) These are the "fingers" of dough that will be braided together. Lay the ham out on along the uncut middle of the dough. Mix the chopped onion and mustard together and spread the mixture ontop of the ham. Lay the swiss cheese ontop of the onion-mustard mixture. Now, braid the pizza dough. Starting on the right side, pull the first "finger" of dough toward the center to cover the ham/cheese mixture, then, pull the first "finger" of the left side over the dough that you pulled from the right side. Continue folding over the dough from alternate sides until you have the braid complete. Bake for 30 minutes - 350 degrees F. IF you need to, let it cook longer because I haven't used a written recipe for this for a years. Serve while warm. -------------------------------------- 7-Layer Dip 1 (8-ounce) package cream cheese, softened 1 tablespoon taco seasoning mix 1 cup prepared guacamole 1 cup tomato-based salsa 1 cup shredded lettuce 1 cup shredded cheddar cheese 1/2 cup chopped green onions 1 (2-ounce) can sliced black olives 1.
