A: Listeria, Not likely. Listeria food-borne illness is usually implicated in cold cuts, hot dogs and soft cheeses (list not inclusive). Besides, Listeria is one of the few bacterium that can survive and MULTIPLY at refrigeration temperature (2-8C). So whether the food is at room temp or refrigeration wouldn't matter.

A: Listeria IS a a form of food poisoning. There are many diseases or sicknesses that can be attributed to food. The most common is Salmonella, followed by various strains of E.Coli. Any illness contracted from food that contains disease is considered a Foodborne Illness. Other types of food poisoning can be attributed to foreign matter in food, such as chemicals, cleaners, solvents, allergy triggers, and poisons.

Would listeria be killed on cheesecloth going through a regular home washer dryer cycle? by lachevriere Q: In food preparation, which includes cheesemaking, listeria can be a serious problem. No listerai has been found in my cheese, but my inspector is afraid for me to wash dairy rugs in the same washer as my cheeecloths. Listeria likes to grow in moist conditions, and can survive refrigeration. I do not believe it could survive a dryer, but I don't know this for sure. Bleach is not an option for my cheesecloth, since it imparts a bleach taste in the cheese, but I do use it on the rugs. Boiling the cloth isn't an option as I don't have the space to boil that much material.

A: Find out if your incoming water is sanitized with chlorine, and if so what percent. The chlorine will kill the listeria, and you can simply use hot water to wash your cheesecloths. Show the report to your inspector for approval. Also, you could turn your hot water heater up high.

A: Food spoilage depends on having some mechanism for bacteria to infect the food, and then on sufficient time and suitable temperatures needed for the bacteria numbers to become large enough to cause spoilage. Pasteurization and cooking increase the amount of time it takes for food to spoil, but neither prevents spoilage. Listeria, salmonella, and all sorts of bacteria grow in food, and they are present in most environments. Even though pasteurizing kills bacteria, handling food, or letting food set out in the open can re-infect the food. Rates of re-infection depend on the length of time food is exposed to open air, or the amount of bacterial transferred from plates, utensils, or from touch (especially if flies land on the food). Its almost impossible to bottle something like pasteurized juice and keep the bottles sterile, so bacteria get into pasteurized foods at the packaging stage. Once infected, bacterial growth is very slow if the food is kept below 40 degrees Fahrenheit. At this temperature, it may take several weeks for bacteria to spoil food. Some bacteria do not grow at all at low temperatures - that's why frozen food doesn't spoil. If food reaches a temperature between 80-90 degrees F, this makes perfect growing conditions for most bacteria, and at these temperatures bacteria can grow so fast, they may be able to produce millions of new bacteria every few minutes. In the home, most food contamination comes form touching the sink, countertop, or dish rag, and then touching the food. Most kitchens have all sorts of dangerous microbes growing near the sink, where dirty dishes are stacked, and where food is prepared. The only way to keep the bacteria at healthy levels is to clean the kitchen surfaces with bleach or other disinfectant every time you prepare food, and never use a dish rag more than one day.

Q: ok i was wondering if u could get listeria from summer sausage? i slice it myself and i thought it was just off deli meat that has been sliced or pre-sliced packaged deli meat/sandwich meat, but now I'm not sure. i've been eating it every morning and (this may be TMI, but has to be said) ive been having the runs and I'm not sure if its related. i read last night that that is a sign of having listeria so now I'm worried. i plan on calling the doc, but they are not open yet and i really want to know.

A: They will probably have to test you, but my cycle has been all messed up since I've been pregnant. I won't go for a week, then I'll have the runs for a couple days and it will clean me out. (Gross, I know) Now that I'm further along, it actually seems I'm a bit more regular...but it's still a bit runny. Diarrhea is also a symptom of pregnancy. I would up your intake of fiber and see if that helps. You might also just have a stomach bug, not related to listeria. But I would just call your drs when they open to see what they say.
